We’ve had like one week of summer in the UK and now it’s been mostly rain. That won’t stop me from enjoying summer like I want to.Â
Summer for me is all about lounging in the garden with some good food and a tall glass of something sweet. It could be with a white wine ginger sangria or even a frozen strawberry basil daiquiri. Lately I’ve had this strawberry vodka mojito on my mind. I have a fondness for mojitos and have been making many variations of this cocktail.
For this you will need
First muddle strawberries, lime and mint together in a highball glass. Add in lime juice, vodka and grenadine, then give it a stir. Top with soda water and garnish with a mint sprig. And enjoy!
Make this with different berries. You can use blueberries, raspberries or blackberries. Or combine all the berries for a mixed berry mojito.Â
Use a simple syrup instead of grenadine. A simple syrup is made with equal amounts of sugar and water . To make this add water and sugar to a saucepan over medium heat. Stir until the sugar has dissolved. Leave to cool before using. The syrup can be stored in the fridge for up 30 days.Â
Make a Skinny Mojito by reducing the calories. Omit the grenadine and use a sweetener like stevia or top off with sprite zero.

So, this looks awesome…but nowhere in the instructions does it say to add the vodka? Would that be added with the lime juice?

I made this with a few alterations and it was delicious! I did use rum instead and added some strawberry liqueur (about 30mls per two people) and everyone loved it but I can imagine it tastes just as good without. Would definitely make it again. Such a nice refreshing flavour and a very nice colour.
