This Strawberry jelly parfait is layers of delicious strawberry jelly and cream. It is an easy dessert to make with just 3 ingredients and is perfect for children.
It was half term last week which means the children are home. All I have heard is Mummy I am hungry. Mummy can I have a drink, mummy what’s for dinner? To add to that their new favourite meal is crepes. I have lost count of the amount of crepes made over the last 3 days. They can’t seem to get enough of crepes. As a treat for Valentine’s Day, I made Strawberry Jelly Parfaits. Usually I would make a cake or some sort of baked treat, but there is no energy left in me. These strawberry jelly parfaits are really easy to make and contains only three ingredients: strawberry jelly, water and whipped cream. My little ones loved it.
Dependent on when you want serve this parfait, give yourself at least 5 hours to allow the jelly to set.
To start make the bottom layer which is simply powdered strawberry jelly and hot water. Make the jelly according to the instructions on the packet. Divide between your serving dishes and refrigerate until set.
For the top layer, prepare the jelly and refrigerate until cool. Fold in whipped cream. and pour over the bottom layer. Place back in the fridge until set.
Top the jelly parfaits with whipped cream and serve with fresh strawberries.
These are perfect for birthday parties or gathering. Serve them in glasses to show off the layers.

Ingredients
- 2 packets strawberry jelly mix (I used jelly cubes)
- Water
- 250 ml (1 cup) whipped cream
Instructions
Separate a packet of strawberry jelly into cubes and place in a jug or bowl.
Add 285ml (1/2 pint ) of boiling water and stir until dissolved.
Add 285 ml (1/2 pint) of cold water, stir then divide evenly between glasses or serving dishes you are using.
Refrigerate until set, up to 2 hours.
Separate strawberry jelly into cubes and place in a jug or bowl.
Add 142 ml (1/4 pint) of boiling water and stir until dissolved.
Add 142 ml (1/4 pint) of cold water and stir. Add 250 ml of whipped cream to jelly mix and stir until mixed. Divide evenly over the the top of the previous jelly.
Refrigerate until set, up to 3 hours.
Before serving top each strawberry jelly parfait with a squirt of whipped cream and a fresh strawberry
