Rocky road brownies start off with a soft fudgy chocolate brownie base that is then topped with chocolate chips, marshmallows and chopped walnuts. Enjoy this rich brownie with a scoop or two of the new Häagen-Dazs Honey Walnut & Cream and a drizzle of Chocolate Honey Fudge Sauce.
Happy December! The countdown to Christmas has started :-). December started off with minus degree temperature. We won’t let that get us down. Tis the season of lots of baking and indulging “guilt free” in delicious treats.
Winter means cosy nights in. And what better way to enjoy these cosy nights in than with Warm Rocky Road Brownies and New Seasonal Häagen-Dazs Honey Walnut & Cream. The ice cream is a made with sweet honey and the crispy caramelised walnuts. A perfect flavour combination. The sweet honey balances out the slightly bitter walnuts. And there is an abundance of walnuts and swirls of honey in the tub.
First step in putting together this dessert was the making the brownie layer. Bake brownie for 30 minutes. Next sprinkle the brownie with chocolate chips , mini marshmallows and chopped walnuts. Final step is to return the brownies to the oven and bake for 3-4 minutes. You want the marshmallows to melt into a soft gooey layer that holds all the walnuts and chocolate chips in place.
Whilst waiting for the brownies to cool, I made a quick Chocolate Honey Fudge Sauce.
An optional step, but I would recommend it 🙂
To serve start of with a big slice of rocky road brownies(no skimping on the portion size ), top with Häagen-Dazs Honey Walnut & Cream and drizzle with chocolate honey fudge sauce. This is the dessert to enjoy on a cosy night in. It’s a marriage of sweet and nutty goodness.

Ingredients
- 160 g (2/3 cup) unsalted butter
- 185 g (6.6 ounces ) semi sweet chocolate
- 200 g (1 cup) sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 90 g (3/4 cup) plain flour
- 50 g (1/2 cup) cocoa powder
- 50 g (1.8 ounces) semi sweet chocolate chips
- 50 g (1.8 ounces) milk chocolate chips
- 100 g (3.6 ounces) milk & semi sweet chocolate chips
- 120 g (4.23 ounces) mini marshmallows
- 80 g (2.82 ounces) chopped walnuts
- 60 g (1/3 cup) brown sugar
- 50 g (1/2 cup) cocoa powder
- 160 ml (2/3 cup) whipping or heavy cream
- 168 g (6 ounces) semi sweet chocolate, divided use
- 120 g (1/2 cup ) honey
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
Instructions
In a saucepan over medium heat, melt the butter and chocolate. Remove from heat and leave to cool for about 10 minutes.
Pre-heat oven to 180 degrees Celsius. Grease and line the bottom and sides of an 8-inch square baking tin with parchment paper, leaving an overhang on the sides. Grease the parchment paper.
Stir in sugar in chocolate mixture. Whisk in eggs one at a time. Add vanilla extract and fold in flour and cocoa powder. Once combined gently fold in chocolate chips.
Pour the brownie batter into the baking tin, spreading evenly to the edges.
Bake for roughly 35 minutes or until a toothpick inserted in the centre of the brownies comes out with a few moist crumbs. Remove from oven and allow to cool completely. Lift the foil out of the cake tin using the overhang on the sides and cut into squares.
Top brownie with chocolate chips, marshmallows, walnuts. Bake for 3-4 more minutes until marshmallows brown and start to melt.
In a pan stir together brown sugar, cocoa powder, whipping cream, honey, half of the chocolate (84 g or 3 ounces), and salt .
Cook over medium heat, stirring, until chocolate is melted. Bring mixture to a boil, then reduce heat to low and allow to simmer for 5 minutes, stirring frequently.
Remove pan from heat then add remaining chocolate, butter and vanilla. Stir until smooth.
Leave to cool for 30 minutes before using. Store leftover sauce in an airtight container in the fridge for up to 2 weeks. To use refrigerated sauce, reheat in the microwave for 30 seconds to 1 minute.
