Ingredients

Homemade Mocha Syrup

  • 50 grams (¼ cup) cocoa powder
  • 50 grams (1.76 oz) 70% dark chocolate, chopped
  • 200 grams (1 cup) sugar
  • 240 ml (1 cup) hot water

  • 2 teaspoons vanilla extract

Mocha Latte

  • 240 ml (1 cup) milk
  • 1 tablespoon instant coffee or espresso powder
  • 60 ml (¼ cup) hot water
  • 2 tablespoons mocha syrup

Instructions

Mocha Syrup

  • Mix espresso powder or instant coffee with 240 ml of hot water . Stir until the coffee has dissolved. In a pan stir together cocoa powder, chocolate chunks, sugar and coffee.
  • Cook over medium heat, stirring, until the chocolate has melted. Bring mixture to a boil, then reduce heat to low and allow to simmer for 10 minute or until the sauce has reduced, stirring frequently,
  • Remove pan from heat then stir in vanilla extract. Leave to cool for 30 minutes before using. Store leftover sauce in an airtight container in the fridge for up to 2 weeks.

To make the Mocha Latte

  • Place the milk in a saucepan and heat it until scalding or 150°F. Place the milk in a glass jug and hold it to an angle and turn on the frother. Move the frother up and down until foamy bubbles form. This takes about 20-30 seconds.
  • Brew the espresso or strong coffee. Pour into a mug and mix in mocha syrup.
  • Pour the frothed milk into the coffee. If desired, garnish with chocolate shavings.
