Soft spicy gingerbread cookies stuffed with soft caramel candies. These flavour packed caramel gingerbread cookies are the perfect Christmas cookies.
With less than 2 weeks until Christmas, I am getting my cookie baking on. About 2 years ago I made gingerbread crinkle cookies. They are soft baked cookies filled with the flavours of ginger, mixed spice and mollases. I can’t begin to tell you how amazing the cookies are. They melt in your mouth with each bite. I kid you not.
This year I decided to jazz them up by stuffing the gingerbread cookie dough with caramel candy. This was done with the help of my trusty assistant who also turned into my hand model.
I do have some tips when it comes to this recipe.
- First thing is to make the gingerbread cookie batter. Chill the cookie dough for 2 hours. This is crucial step and not to be missed. The cookie dough batter will be wet and needs to be chilled until you can roll it without the dough sticking your hands, about 1 -2 hour. The longer you chill, the easier it will be handle to the dough.
- Second chilling step is after you have stuffed the gingerbread cookie batter with caramel. Chilling the dough stops the cookie from spreading too much when baked and produces thicker cookies. I chilled the cookie dough for 2 hours.

To stuff the gingerbread cookie dough, you will need 10 soft caramel candies cut in half. I used Krafts caramel . Take 2 scoops of cookie batter using a small cookie scoop or a tablespoon. Roll each scoop into a ball. Place a caramel candy on one ball of dough . Top the caramel with the other ball of cookie dough and roll into a ball until the caramel isn’t showing. Place on a baking tray lined with parchment paper and refrigerate for 2 hour or overnight.
Bake for 10- 12 minutes. The caramel gingerbread cookies will be soft when removed from the oven and look underdone. The cookies will continue to bake as they cool on the baking sheet.
This is such a winning combo. Soft baked spicy caramel gingerbread cookies filled with oozing sweet caramel.
