Plump juicy prawns marinated in red pesto sauce and grilled over a coal barbecue. An impressive appetiser to serve guests at a summer barbecue.
It is barbecue season!!! 🙂 Most weekends the barbecue is lit and we tuck into grilled meats and fish. My favorites are grilled juicy prawns. Prawns marinated in homemade red pesto sauce. After making red pesto chicken kebabs I just couldn’t get enough of red pesto sauce. I love how pesto sauce can be used for so many dishes. And the recipe for pesto marinated prawns could not be easier.
Usually I buy my prawns peeled. This time round, I thought I would have a go at peeling and deveining them myself. For this recipe I used a pound of prawns, though the weight of the prawns will reduce once the shells are removed. Be sure to have a bowl of cold water handy to place prawns in whilst you peel the rest, it keeps them fresh. There are lots of helpful tutorials that show how to peel and devein prawns like this one. Once cleaned, marinate the prawns in red pesto sauce and then put on the wooden skewers. I recommend soaking the wooden skewers for up to an hour before use. It stops the wooden skewers from burning on the grill.
Heat up grill until hot or light up barbecue. Grease the grates with oil. Place the marinated prawns on the grill until it turns pink on the bottom. This will take about 3-4 minutes. Turn over and cook other side until cooked through, another 3-4 minutes.
Serve with lime wedges and more red pesto. Enjoy !!
